Hosting a party?  Going over to a friend’s house for dinner?  Meeting in-laws for the first time?  If you really want to impress anyone (family or friends), this cake is quick, easy and a cheap, homemade dessert for absolutely any occasion.  And, of course, the people eating it will think you slaved for HOURS 🙂 This is a recipe I found a long time ago, and I have made several edits to make it taste better.

Ingredients (Cake)

  • 1 1/2 Cups butter, softened (3 sticks)
  • 2 Cups sugar
  • 4 Eggs
  • 1 1/2 TSP lemon extract
  • 1 1/2 TSP vanilla extract
  • 3 Cups all-purpose flour
  • 2 TSP baking powder
  • 1/2 TSP salt
  • 1 Cup milk (I prefer 1%)
  • 1 TBSP grated lemon peel

Ingredients (Glaze)

  • 1/2 Cup fresh lemon juice (bottled works as well)
  • 2 TBSP water
  • 1 TSP lemon extract
  • 1 1/2 Cups sugar


  1. Preheat over to 350 degrees
  2. In a mixing bowl, cream the butter and sugar
  3. Add the eggs, one at a time, beating well after each egg
  4. Beat in the extracts (lemon/vanilla)
  5. Combine flour, baking powder and salt.  Add to the creamed mixture, alternating with the milk
  6. Stir in the fresh lemon peel
  7. Pour into a bundt pan (I have found that NOT greasing it will work best if it’s non-stick.  If you must, grease and flour the pan)
  8. Bake at 350 degrees for 50-60 minutes depending on the temperature of the oven, or until a toothpick inserted in the middle comes out clean of any cake
  9. Cool for 10-15 minutes
  10. Place a wire rack on a sheet of wax paper and then invert cake onto rack
  11. Combine glaze ingredients; drizzle over cake and allow to cool
  12. Serve and enjoy!

NOTE:  We doubled the amount of ingredients for the glaze, since we LOVE glaze 🙂  But just cut everything in half for a lighter coating
